Bolivia – Ayni Coffee

Ayni Coffee from Bolivia is inspired by the centuries-old tradition of Ayni—reciprocal support and cooperation. Produced by the Sajama Cooperative in Caranavi, La Paz, this organic specialty coffee is cultivated by 42 small-scale farmers who work together to achieve outstanding quality from bean to cup. The cooperative focuses on sustainable farming, quality control, and fair trade, and strengthens its members through training and joint decision-making. The result is a pure, balanced coffee with a lively aroma and an authentic origin character.

Indonesia – Sumatra Gayo Highlands

This coffee lot is a premium, triple-sorted, wet-hulled variety from the Gayo Highlands of Sumatra, Indonesia. This BIO-certified coffee is cultivated by small-scale farmers, many of whom are part of cooperatives. The unique wet-hulling (or giling basah) processing method, typical for Indonesia, gives the coffee its distinctive deep, aromatic and sweet taste profile. This process was developed in this region to accommodate high humidity and irregular rainfall common here. The coffee undergoes a rigorous sorting process where green beans are checked three times to ensure exceptional quality before being sent out. A hallmark of Indonesian specialty coffee expertise.
