More about the CO2-decaffeination process

During what is called the CO2 process, liquid CO2 – like in soda drinks – is used to absorb caffeine from the seeds. The CO2 selectively absorbs caffeine from the seeds and then is drained out of the vessel into a condenser. There it’s vaporized again and condensed, so that the caffeine leaves the seeds and can be added back to the coffee. This process is repeated until the caffeine content in the coffee drops below 0.01%. The beauty of the CO2 process is that carbon dioxide is a completely natural chemical substance. It's everywhere and we consume it daily. It’s found in the carbonated water we drink and in the air we breathe. In contrast to other processes where substances like methylencidine are used, this one leaves no harmful substances behind. The CO2 only extracts caffeine from the coffee seeds, so all good components stay intact. This means that the taste and aromatic compounds remain precisely where they belong: in the seed.
